Turkey Meatballs in a Delicious Tomato Sugo

INGREDIENTS (4 Portions)

For the Meatballs

  • 1 lb ground turkey, organic

  • ~1 cup bread crumbs (equal in volume to the turkey)

  • 2 eggs

  • ~½ cup lukewarm milk

  • Salt and pepper, to taste

  • Oil for frying

For the Sauce

  • ½ yellow onion, finely chopped

  • 1-2 cans Italian tomatoes (crushed or whole, cut into pieces)

  • 1-2 cubes vegetable bouillon (e.g., Knorr)

  • 1-2 Tbsp Herbs de Provence

  • Salt and pepper, to taste

  • Oil for cooking

  • Splash of olive oil, for flavor

  • Parsley, finely chopped (for garnish)

Utensils:

  • Mixing bowl

  • Tablespoon or cookie scoop (~4.5cm or 1.77 inch)

  • Frying pan (with lid)

  • Wodden spoon or silicone spatula

These juicy turkey meatballs are lightly seared for a golden crust, then simmered in a flavorful tomato sauce seasoned with Herbs de Provence. Serve them with your favorite side—pasta, rice, toasted bread, or potatoes—for a cozy and satisfying meal.

Prepare the Meatballs

  1. In a large mixing bowl, add the ground turkey and bread crumbs.

  2. Pour the lukewarm milk (98°F to 110°F / 37°C to 43°C) over the bread crumbs and let it soak for a moment.

  3. Add the eggs, salt, and pepper, then let the mixture soak for another ~2 minutes.

  4. Using your hands, mash and mix the ingredients until well combined.

  5. Check consistency: If too dense, add a splash of milk. If too loose, add some breadcrumbs.

  6. Form meatballs about 4.5 cm (~1.75 inches) in diameter using a small cookie scoop or your hands.

  7. Heat oil in a pan over medium heat and sear the meatballs on all sides until golden brown. They should be browned but not fully cooked through.

  8. Remove from the pan and set aside.

Make the Sauce

  1. In the same pan, heat a bit of oil over medium heat.

  2. Add the chopped onions and sauté until glossy and translucent.

  3. Stir in the canned tomatoes and let simmer for a few minutes.

  4. Add the vegetable bouillon, Herbs de Provence, and season to taste with salt, and pepper. Stir to combine and adjust seasoning as needed.

  5. (Optional) Drizzle with a splash of olive oil for extra flavor.

  6. Return the meatballs to the pan, cover with a lid, and simmer over low-medium heat for a few more minutes until they are fully cooked and have absorbed the flavors.
