Quick & Easy: Chicken Tenders in a Buttery Cherry Tomato

A simple yet flavorful dish featuring golden-browned chicken tenders in a rich, buttery cherry tomato sauce. Perfect for a quick weeknight meal!

Ingredients (2-3 servings):

  • 1 pound chicken tenders

  • 1 tsp oil or ghee for cooking

  • Salt, to taste

  • Pepper, to taste

  • 3 tbsp butter, divided

  • 1.5-2 cups cherry tomatoes, halved

  • 1 shallot, finely chopped

  • Fresh parsley, chopped (for garnish)

Utensils:

  • Cutting board

  • Sharp knife

  • Frying pan

  • Silicone spatula or wooden spoon

  • Bowl

Instructions:

Season the chicken tenders with salt and pepper. Heat oil or ghee in a pan over medium heat. Cook the chicken for about 4-5 minutes per side, until golden brown and cooked through. In the last minute, add ~1 tbsp butter to glaze the chicken, ensuring it doesn’t burn. Remove the chicken from the pan and set it aside.

In the same pan, melt 2 tbsp butter over low-medium heat. Add the chopped shallot and halved cherry tomatoes. Sauté for 5-10 minutes, stirring occasionally, until the tomatoes soften and release their juices.

Return the chicken to the pan, stirring gently to coat it in the sauce. Simmer on low-medium heat for a few minutes until everything is warmed through.

Garnish with fresh chopped parsley, and serve immediately with your favorite side, like rice, pasta, or crusty bread. Enjoy your quick and delicious meal!
