3-Minute Blitz-Pasta: Spaghetti with Tomato Sauce

INGREDIENTS (1 Portion)

  • 125g spaghetti or other pasta (cooked as directed on the package)

  • 1 tbsp butter

  • 1 tbsp all-purpose flour

  • 1–2 tbsp tomato paste (preferably 3x concentrated)

  • 1/4–1/2 cup filtered water

  • 1 tsp vegetable bouillon powder or 1/2 cube vegetable bouillon

  • 1 tsp dried herbes de Provence (or substitute with oregano, parsley, or rosemary)

  • Salt & pepper, to taste

  • 1 tsp heavy whipping cream

  • Optional: Grated Parmesan for garnish

UTENSILS

  • Large pot

  • Whisk or wooden spoon

This morning, I realized we were out of prepped lunch options for my daughter. With only 10 minutes before she needed to leave, I quickly decided to make a simple yet tasty pasta with tomato sauce. Fortunately, I had some cooked pasta in the fridge, so all I needed was the sauce. In just three minutes, I whipped up a delicious tomato sauce that was such a hit, my daughter even licked the pan clean!

Melt the butter in a pan over medium heat. Add the flour and whisk continuously until the mixture forms a foamy paste.

Stir in the tomato paste and let it roast for 30 seconds with the butter-flour mixture. Gradually add the water while whisking to create a smooth sauce, ensuring there are no lumps.

Add the vegetable bouillon and herbes de Provence, then season with salt and pepper to taste.

Finish by stirring in a splash of heavy whipping cream for a creamy flavor. Toss the pasta into the sauce, mix well, and serve. Garnish with Parmesan if desired.
